Thanks to Chumphon’s geographical characteristics, featuring heavy rainfall and mineral-rich soil, the coffee beans produced here are of exceptionally high quality. The civet coffee farming here is distinguished by its meticulous management under community enterprise groups. The farm raises indigenous civets in clean, semi-natural housing to ensure the animals remain stress-free and healthy, which directly influences the quality of the digestive enzymes that react with the coffee beans.

The core of the production process begins with the selection of the finest ripe coffee cherries, or "coffee cherries," of the Robusta variety during the harvest season. These are fed to the civets, who instinctively select only the most perfect and fully ripe fruits to consume. The coffee beans undergo a natural fermentation process by enzymes in the civet’s stomach, which breaks down the proteins that cause bitterness. This transforms the beans, resulting in a smoother flavor and a complex aroma with hints of wild fruit or floral notes. Subsequently, the excreted coffee beans are thoroughly cleaned through multiple stages and sun-dried for several months to reduce moisture to a minimum level, adhering to international food safety standards.

In the final processing stage, the parchment coffee is hulled and roasted to an optimal level to highlight the distinct identity of Chumphon Robusta.
