 Betong Chicken is considered one of the most important culinary identities of Betong District, Yala Province. It originates from the “Lanshan” chicken breed (also known as Lanzhou or Lingnan Chicken), which was introduced by Chinese immigrants several decades ago. Over time, the breed has been carefully developed and adapted to Betong’s unique mountainous climate—cool and misty throughout the year—earning the nickname “the city of three-season mist.”

One of the key characteristics of Betong Chicken lies in its semi-free-range farming method. The chickens are allowed to roam freely in open areas, encouraging natural movement and muscle development. This results in firm yet tender meat, unlike typical free-range chickens that may be tougher. Additionally, their diet mainly consists of grains and local vegetation, giving the meat a naturally sweet flavor, low fat content, and no unpleasant odor.

In terms of culinary preparation, “chopped Betong chicken” is the signature dish that truly reflects the chef’s expertise. The cooking technique involves carefully boiling the chicken at a controlled temperature and precise timing to ensure the skin remains smooth, slightly bouncy, and intact, while the meat stays juicy and tender.   • By Car: From Yala city, take Highway 410 to Betong District (approximately 140 km). Alternatively, travel by van from Hat Yai or Yala. In Betong town, most famous restaurants are located near the clock tower and Betong Mongkollit Tunnel.
