Udon-ya Fukusuke is one of the most iconic udon restaurants in Ise, distinguished by its dedication to making fresh udon noodles daily using high-quality wheat flour from Mie Prefecture. The restaurant specializes in Ise Udon, a regional dish closely tied to the history of pilgrims traveling to Ise Grand Shrine.

Unlike Sanuki Udon or other udon styles known for firmness and chewiness, Ise Udon is intentionally boiled for an extended period, resulting in noodles that are extremely soft, pillowy, and flour-rich. For first-time visitors, this texture may feel unfamiliar or even overcooked; however, it was historically designed to be easy to digest for tired pilgrims after long journeys.

The noodles are lightly coated with a small amount of thick, dark sauce made from tamari soy sauce, kombu kelp, and dried bonito flakes. This sauce delivers deep umami while remaining gentle and balanced. A popular local variation is Aosa Udon, topped with fragrant sea lettuce from nearby Ise Bay, adding a subtle ocean aroma. For a premium experience, Matsusaka beef is offered as a topping, bringing richness and tenderness to the dish.

At the entrance of the shop stands the well-known Fukusuke statue, a big-headed figure bowing politely, symbolizing good fortune and prosperity. Together with the traditional ceramic roof tile (onigawara), it serves as a popular photo spot and an easy meeting landmark.
